Bovinmarche fa scuola… di gusto!
Nuovo appuntamento, martedì a Loreto, con “Anteriore: povero ma buono” il corso sulla carne marchigiana promosso in collaborazione con Bovinmarche. Ultimi posti disponibili
Loreto, 15 marzo 2019 – Torna il corso che strizza l’occhio alla tradizione, al risparmio, alla valorizzazione di una grande materia prima, la Marchigiana. Martedì 19 marzo, nell’aula didattica dell’IIS Alberghiero Einstein Nebbia di Loreto (AN), appuntamento con “Anteriore, povero ma buono. Proposte interessanti e idee di riutilizzo dell’anteriore bovino della razza marchigiana” l’iniziativa che mira a coinvolgere allievi dell’istituto e professionisti del settore in una full immersion dedicata all’“Anteriore” taglio bovino “re” delle ricette della tradizione marchigiana.
A promuoverlo è la Federazione Nazionale Cuochi Sezione di Ancona in collaborazione con l’Associazione Italiana Macellerie Artigiane e Bovinmarche, cooperativa di allevatori marchigiani, che metterà a disposizione la materia prima, certificata e di ottima qualità, con cui si cimenteranno gli iscritti alla giornata di formazione.
“La partecipazione ottenuta a fine gennaio a Senigallia con il primo corso dedicato a questo taglio spesso sottovalutato – ha sottolineato Domenico Romanini, presidente Bovinmarche – ci ha spinto a riproporre un’iniziativa che si inserisce appieno nella mission della nostra cooperativa: promuovere, valorizzare e indicare come riconoscere la carne di qualità delle Marche”.
A guidare la lezione, spiegando, tra l’altro, la realizzazione di piatti che hanno segnato la storia gastronomica delle Marche, sarà Fabrizio Gasparrini, della macelleria “Da Samorina” di Loreto, socio AIMA e membro dello staff tecnico della Nazionale Italiana Macellai.
Il corso è in programma dalle ore 8.30 alle 13. Il costo dello stesso, per gli allievi è di 10€ (tesseramento 35€), per i professionisti è di 30€ (tesseramento 60€).
